Ingredients

3 scallions (spring onions), finely chopped

Handful of cilantro (coriander) leaves, chopped

1 lb (500g) ground chicken (or pork, turkey, beef, or plant-based alternative)

3 garlic cloves, crushed

1-inch piece of ginger, grated (or 2 tsp ginger paste)

2 tbsp light soy sauce

1 tbsp sesame oil

2 tsp fish sauce

1 tbsp black vinegar (or rice vinegar)

6 to 8 flatbreads (depending on size)

Olive oil, for frying

Instructions

Make the Filling:

In a mixing bowl, combine ground meat, scallions, cilantro, garlic, ginger, soy sauce, sesame oil, fish sauce, and black vinegar. Mix well.

Prepare the Flatbreads:

Slice flatbreads in half. Carefully open each half into a pocket without cutting through.

Stuff the Flatbreads:

Spoon a couple of heaped tablespoons of filling into each pocket. Smooth evenly inside, keeping it about 1 inch thick.

Cook the Flatbreads:

Heat a non-stick pan over medium-high heat with a drizzle of olive oil.

Place stuffed flatbreads in the pan and cook for 4 minutes per side, until golden and crispy.

Sear the edge of each flatbread for 1 minute, then remove. Repeat with remaining flatbreads.
