1 tortilla wrap

1/3 cup cheddar cheese, grated

1 tablespoon hot sauce (e.g., sriracha or sambal oelek)

Handful fresh chives, finely sliced

Instructions

Cook Bacon & Scallions:
Whisk the eggs in a bowl. Heat a non-stick skillet over medium-high heat, then add chili crisp, bacon, and scallions. Sautรฉ for 5 minutes until crispy. -
Add Eggs:
Pour in the eggs and swirl the pan to spread them evenly. Sprinkle with everything bagel seasoning. Let cook until edges are set and center is slightly wet. -
Add Tortilla:
Place tortilla directly on top of the eggs and press down gently. Loosen the edges with a spatula, then flip the whole thing so the tortilla is now underneath. -
Finish with Cheese & Sauce:
Spread hot sauce over the egg side, sprinkle cheddar and chives, then fold the wrap in half. Press down with the spatula for 2โ3 minutes until the cheese melts.
