Description

These Spanakopita Spring Rolls combine the classic flavors of Greek spanakopita with a crispy, golden wrapper. Filled with a delicious blend of spinach, feta, mozzarella, and herbs, theyโ€™re air-fried for a healthier twist! Perfect as appetizers and snacks, quick high-protein meals, or simple high-protein meals, these rolls are a must-try. Ingredients

  • 1 tbsp olive oil
  • 2 scallions, chopped
  • 5 handfuls baby spinach, roughly chopped
  • Salt and pepper (to taste)
  • 1/4 cup dill, chopped
  • 4 oz feta cheese, crumbled
  • 3/4 cup mozzarella, shredded
  • 1 egg, lightly beaten
  • 1/3 cup grated parmesan cheese
  • 1/3 cup breadcrumbs

  • 12 spring roll wrappers

Instructions

  • Heat olive oil in a large skillet over medium heat. Add scallions and sautรฉ for 1-2 minutes.
  • Add spinach (in batches if needed) and sautรฉ until just wilted. Season with salt and pepper. Remove from heat and drain excess moisture.
  • In a large bowl, mix the spinach, dill, feta, and mozzarella until well combined.
  • Set up a workstation with:
    • Beaten egg in one bowl
    • Parmesan and breadcrumbs mixed in another shallow bowl
    • A plate with water to soften spring roll wrappers
  • Submerge a spring roll wrapper in water for 10-15 seconds, then pat dry.
  • Place 3 tbsp of the spinach-feta mixture on one side of the wrapper and roll tightly, tucking in the sides.
  • Dip each roll in the beaten egg, letting excess drip off, then coat in the parmesan-breadcrumb mixture.
  • Preheat air fryer to 375ยฐF. Spray rolls lightly with olive oil.
  • Air fry in batches for 7 minutes or until golden brown.

  • Remove and sprinkle with chili pepper flakes before serving.

Notes

  • Serve with tzatziki or a yogurt dip for extra flavor.
  • Make it gluten-free by using gluten-free breadcrumbs and wrappers.
