This Southern Squash Casserole is a comforting and delicious side dish made with tender yellow squash, onions, sour cream, cheddar cheese, and a buttery Ritz cracker topping. - 4 tablespoons unsalted butter (divided)
- 6 cups yellow squash (sliced 1/4-inch thick)
- 1 small yellow onion (chopped)
- Salt (to taste)
- Cracked black pepper (to taste)
- 3 cloves garlic (minced)
- 3/4 cup sour cream
- 1/2 cup mayonnaise
- 1/4 cup heavy cream
- 2 large eggs (beaten)
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper (optional)
- 1 sleeve Ritz crackers (coarsely crushed)
- 1 cup sharp cheddar cheese (freshly grated)
Instructions
- Preheat your oven to 375ยฐF (190ยฐC).
- Melt 2 tablespoons of butter in a large nonstick skillet over medium-high heat. Add the sliced squash and chopped onions, seasoning with salt and cracked black pepper. Cook for 5 to 7 minutes, stirring constantly, until tender.
- Add minced garlic and cook for another 30 seconds to 1 minute. Remove from heat.
- In a large mixing bowl, combine sour cream, mayonnaise, heavy cream, cheddar cheese, onion powder, garlic powder, smoked paprika, cayenne pepper (if using), salt, and pepper. Add the cooked squash and onion mixture and stir well to combine.
- Taste the mixture and adjust seasoning if necessary. Stir in the beaten eggs until fully incorporated.
- Transfer the squash mixture into a 9-inch square baking dish.
- In a small glass bowl, melt the remaining 2 tablespoons of butter. Add the crushed Ritz crackers to the melted butter and stir to coat.
- Sprinkle the buttery cracker topping evenly over the casserole.
- Bake for 40 to 45 minutes, until golden brown and bubbly. Allow the casserole to cool slightly before serving.
Notes
- You can adjust the level of heat by omitting the cayenne pepper if you prefer a milder flavor.
- This casserole can be prepared in advance and baked when ready to serve.
