Ingredients

Units Scale

Chocolate Base

  • 1/4 cup cocoa powder (natural or Dutch-processed)
  • 1 cup granulated sugar (divided between base and topping)
  • 1/4 teaspoon salt (divided between base and topping)
  • 1 cup hot water
  • 1 teaspoon vanilla extract
  • 1/2 cup chocolate chips or chopped chocolate (optional)

Biscuit Topping

  • 1 cup all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 cup granulated sugar
  • 1/4 teaspoon salt
  • 1/2 cup cold butter, cut into pieces
  • 3/4 cup milk or buttermilk

Instructions

  1. Prepare the chocolate base: In a baking dish, combine cocoa powder, half of the granulated sugar, half of the salt, and hot water. Stir until the sugar dissolves completely and the mixture becomes glossy, forming a rich chocolate sauce that will bubble beneath the biscuit topping while baking.
  2. Mix the biscuit topping: In a separate bowl, whisk together the flour, baking powder, remaining sugar, and remaining salt. Cut in the cold butter using a pastry cutter or fingers until the mixture resembles coarse crumbs. Add the milk (or buttermilk) and vanilla extract, stirring gently just until combined to keep the topping tender; do not overmix.
  3. Assemble and bake: Drop spoonfuls of the biscuit dough evenly over the chocolate mixture in the baking dish. The biscuit topping will rise and turn golden while baking, and the chocolate base will become luscious and bubbling underneath. Bake in a preheated oven at 350ยฐF (175ยฐC) for about 30 to 35 minutes, or until the biscuit topping is golden and a toothpick inserted into the biscuit comes out mostly clean.
  4. Cool slightly and serve: Allow the cobbler to cool for a few minutes to let the chocolate thicken slightly before serving warm. Enjoy it on its own or topped with whipped cream, ice cream, or fresh berries.

Notes

  • Use room temperature ingredients where possible to ensure even mixing and a lighter biscuit topping.
  • Do not overmix the biscuit dough to avoid tough biscuits; mix just until combined.
  • For the deepest chocolate flavor, choose a good-quality cocoa powder.
  • Let the cobbler rest a few minutes after baking to set the layers for easier serving.
  • Dust the top with powdered sugar before serving for an attractive finish.
