Ingredients

  • 2 cups (275 g) elbow macaroni

  • 2 tbsp unsalted butter (plus more for the baking dish)

  • 1 large egg (beaten, room temperature)

  • 1 can (13 oz) evaporated milk

  • 1 cup (249 g) whole milk (room temperature)

  • 8 oz (227 g) extra-sharp white cheddar cheese (shredded)

  • 12 oz (340 g) mild cheddar cheese (or Monterey Jack, Fontina, Colby Jack, or Gouda, shredded)

  • 8 oz (227 g) mascarpone cheese (room temperature)

  • 1 1/2 tsp salt (or to taste)

  • 1 tsp Cajun or Creole seasoning

  • 1/2 tsp dry mustard powder (or 1 tsp Dijon mustard)

  • 1/8 tsp ground nutmeg

Instructions

  1. Preheat the Oven: Preheat the oven to 375ยฐF (190ยฐC). Lightly coat a 3-quart casserole dish or 9ร—13 pan with butter or cooking spray.
  2. Cook the Macaroni: Cook the macaroni in unsalted water according to the package directions, adding 2 minutes to the maximum time listed (aim for 12 minutes). Drain and stir in butter until melted.
  3. Prepare the Cheese: Shred the cheese blocks using a box grater or food processor. Combine the shredded cheese varieties until evenly mixed.
  4. Make the Cheese Sauce: In a large bowl, whisk together mascarpone and evaporated milk until smooth (lumps are fine). Add the milk, salt, Cajun or Creole seasoning, mustard powder, and nutmeg, then stir to combine.
  5. Mix the Macaroni and Cheese: Add the buttered macaroni to the bowl with the cheese sauce, then stir in half of the shredded cheese. Taste and adjust seasoning if needed, then stir in the beaten egg.
  6. Assemble the Dish: Pour half of the macaroni mixture into the prepared baking dish, spreading it evenly with a spoon. Sprinkle half of the remaining cheese on top, then repeat with the remaining macaroni mixture and cheese. Top with fresh cracked pepper, if desired.
