Description

Honey and Toffee Cookies are chewy, golden delights with deep caramel flavor from rich honey and bits of buttery toffee. These cookies are sweet, slightly crisp on the edges, and irresistibly soft in the center—perfect for any cookie lover.

Ingredients

Units Scale
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/4 cup honey
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup toffee bits

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the honey, egg, and vanilla extract until well combined.
  4. In a separate bowl, whisk together flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms.
  6. Fold in the toffee bits evenly.
  7. Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them 2 inches apart.
  8. Bake for 9–11 minutes or until edges are golden and centers are just set.
  9. Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • Do not overbake—cookies will continue to set as they cool.
  • For extra texture, sprinkle sea salt on top before baking.
  • Store in an airtight container for up to 5 days.
  • Chilling the dough for 30 minutes before baking can enhance the flavor and shape.
