Description

Rich, creamy, and cheesy, this Smothered Cheesy Sour Cream Chicken is comfort food at its finest! Juicy chicken breasts are simmered in a savory sauce packed with flavor, perfect for serving over rice, mashed potatoes, or egg noodles.

Ingredients

Units Scale
  • 1.5 lbs boneless, skinless chicken breasts
  • 1 (10.5 oz) can condensed cream of chicken soup
  • 1 (8 oz) container sour cream
  • 1/2 cup milk
  • 1/4 cup chopped onion
  • 1/4 cup chopped green bell pepper
  • 1 (10.75 oz) can diced tomatoes and green chilies, undrained
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/2 cup shredded cheddar cheese

Instructions

  • Brown Chicken: Heat a little oil in a large skillet over medium heat. Brown the chicken breasts on both sides until golden, about 4-5 minutes per side.
  • Combine Ingredients: In a mixing bowl, whisk together the cream of chicken soup, sour cream, milk, onion, bell pepper, tomatoes and green chilies, garlic powder, and black pepper.
  • Pour Sauce: Pour the prepared sauce over the browned chicken in the skillet.
  • Simmer: Bring to a simmer, reduce heat to low, cover, and cook for 20-25 minutes or until the chicken is cooked through (internal temperature of 165°F/74°C).
  • Add Cheese: Remove from heat and stir in the shredded cheddar cheese until melted.
  • Serve: Serve immediately over rice, mashed potatoes, or egg noodles for a hearty and satisfying meal.

Notes

  • Add Mushrooms: Sauté sliced mushrooms with the onion and bell pepper for an earthy twist.
  • Spice it Up: Add a pinch of red pepper flakes or a splash of hot sauce for some heat.
  • Creamier Sauce: Swap the milk for heavy cream for an even richer dish.
  • Cheese Options: Try Monterey Jack, Colby Jack, or pepper jack for a unique flavor.
