- 2 teaspoons olive oil
- 1 teaspoon soy sauce
- 2 tablespoons olive oil (for sauce)
- 1 medium onion, diced
- 3 garlic cloves, minced
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- 1/2 teaspoon chili flakes (optional)
- 1 can (28 oz) crushed tomatoes
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 8 oz lasagna noodles, broken into large pieces
- 3 cups vegetable broth
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- Fresh basil leaves, for garnish
Instructions
- Heat 2 teaspoons olive oil in a skillet over medium heat. Add the cooked lentils and soy sauce, stirring occasionally, until they become crispy and lightly browned. Transfer to a plate and set aside.
- In the same skillet, heat 2 tablespoons olive oil. Add the diced onion and cook until soft and translucent, about 5 minutes.
- Add minced garlic, smoked paprika, oregano, and chili flakes (if using). Stir for 1 minute until fragrant.
- Pour in the crushed tomatoes, salt, and pepper. Stir and let simmer for 5 minutes.
- Add broken lasagna noodles and vegetable broth. Stir to coat the pasta with sauce, cover, and cook over medium heat for 12-15 minutes, stirring occasionally until pasta is tender.
- Dollop ricotta over the pasta, sprinkle with mozzarella, and cover until the cheese melts.
- Top with crispy lentils and fresh basil before serving hot.
Notes
- You can use red lentils, but they will be softer and less crispy than brown lentils.
- For extra smokiness, add a pinch of chipotle powder to the sauce.
- This dish can be made ahead; simply reheat and add fresh toppings before serving.
