Description

These Smoky Cheesy Jalapeño Chicken Rolls are packed with bold flavors, featuring spicy sausage-stuffed jalapeños wrapped in tender chicken and crispy bacon. Ingredients

(Serves 10)

 

  • 10 thin boneless, skinless chicken breasts

  • 1 lb hot Italian sausage

  • 6 oz cream cheese, softened

  • 1 1/2 cups sharp cheddar cheese, shredded

  • 1/3 cup sliced green onions

  • 10 jalapeños, halved and deseeded

  • 36 oz bacon (about 3 packs)

  • 2 tbsp Slap Ya Mama seasoning

  • 1 tbsp black pepper

  • BBQ sauce for brushing


Instructions

  • Preheat the Smoker:

    • Set smoker to 250°F (120°C).

  • Prepare the Filling:

    • In a bowl, mix sausage, cream cheese, cheddar cheese, and green onions until well combined.

  • Stuff the Jalapeños:

    • Slice jalapeños in half, remove seeds, and stuff each one with the cheesy sausage mixture.

  • Season the Chicken:

    • Lay out the chicken breasts on parchment paper and season with Slap Ya Mama seasoning and black pepper.

  • Assemble the Rolls:

    • Place a stuffed jalapeño on each chicken breast.

    • Roll the chicken around the jalapeño and wrap with bacon, securing with toothpicks.

  • Smoke the Chicken Rolls:

    • Place on the smoker grates and smoke for 4 hours, flipping halfway.

  • Glaze with BBQ Sauce:

    • Brush with BBQ sauce and cook for another 20-30 minutes until internal temp reaches 165°F (74°C).

 

  • Serve & Enjoy:

    • Let rest for a few minutes, then serve warm!

  • Grill Option: Cook over indirect heat at 275°F for 2.5-3 hours until done.

  • Oven Option: Bake at 350°F for about 1 hour, then broil for crispier bacon.
