It’s an easy homemade recipe perfect for busy weeknights, and it comes together in just 30 minutes. Serve it with a side of roasted veggies or a fresh salad for a complete meal!

Ingredients

Units Scale
  • 1 lb (450g) smoked sausage, sliced into rounds
  • 1 1/2 lbs (680g) potatoes, diced into 1/2-inch cubes
  • 2 tbsp olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp red pepper flakes (optional)
  • 1/2 cup shredded cheddar cheese (optional)
  • 2 tbsp fresh parsley, chopped (for garnish)

Instructions

  • Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the sliced smoked sausage and cook until browned, about 4-5 minutes. Remove and set aside.
  • In the same skillet, add the remaining olive oil and diced potatoes. Season with salt, black pepper, smoked paprika, garlic powder, and onion powder. Cook for 10-12 minutes, stirring occasionally.
  • Add diced onion and minced garlic to the skillet. Cook for another 3-4 minutes until the potatoes are golden and tender.
  • Return the smoked sausage to the skillet and stir to combine. Cook for another 2 minutes to heat through.
  • If using cheese, sprinkle it over the top and cover for 1-2 minutes until melted.
  • Garnish with fresh parsley and serve warm.

Notes

  • Swap smoked sausage for turkey sausage or kielbasa for a different flavor.
  • Use sweet potatoes instead of regular potatoes for a slightly sweeter variation.
  • Add bell peppers or mushrooms for extra veggies.
