- 1 lb (450g) smoked sausage, sliced into rounds
- 1 1/2 lbs (680g) potatoes, diced into 1/2-inch cubes
- 2 tbsp olive oil
- 1 small onion, diced
- 3 cloves garlic, minced
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp red pepper flakes (optional)
- 1/2 cup shredded cheddar cheese (optional)
- 2 tbsp fresh parsley, chopped (for garnish)
Instructions
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the sliced smoked sausage and cook until browned, about 4-5 minutes. Remove and set aside.
- In the same skillet, add the remaining olive oil and diced potatoes. Season with salt, black pepper, smoked paprika, garlic powder, and onion powder. Cook for 10-12 minutes, stirring occasionally.
- Add diced onion and minced garlic to the skillet. Cook for another 3-4 minutes until the potatoes are golden and tender.
- Return the smoked sausage to the skillet and stir to combine. Cook for another 2 minutes to heat through.
- If using cheese, sprinkle it over the top and cover for 1-2 minutes until melted.
- Garnish with fresh parsley and serve warm.

- Swap smoked sausage for turkey sausage or kielbasa for a different flavor.
- Use sweet potatoes instead of regular potatoes for a slightly sweeter variation.
