Description

This Smoked Sausage Chimichurri Sandwich is the perfect tailgate treatโ€”smoky Eckrich sausage, caramelized onions, melty provolone, zesty chimichurri, and a kick of chipotle mayo all packed into a toasted French baguette.


Ingredients

  • 1 Eckrich Original Skinless Smoked Sausage Rope, cut in half & flayed open
  • 2 cups onions, sliced
  • 2 tbsp unsalted butter
  • 1 tbsp brown sugar
  • 3 slices provolone cheese
  • French baguette, cut into 6-inch segments and halved
  • Chimichurri Ingredients:
  • 1/2 cup parsley, chopped
  • 3 cloves garlic, pressed
  • 3/4 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 tsp red pepper flakes
  • Salt and pepper to taste
  • Optional Chipotle Mayo Ingredients:
  • Chipotle in adobo sauce, stemmed and pureed
  • 1/2 cup mayonnaise

Instructions

  1. Preheat fire to medium-high heat and place a cast iron pan or plancha over the flame for 1โ€“2 minutes.
  2. Add sliced onions with a bit of oil to the skillet and cook for 3โ€“4 minutes until soft.
  3. Add the flayed smoked sausage rope and cook for 4 minutes per side.
  4. Add butter and brown sugar to the onions, letting them caramelize, then top with provolone cheese.
  5. Remove the sausage and onion-cheese mixture from the skillet.
  6. Grill baguette segments on the plancha for 2โ€“3 minutes until lightly toasted.
  7. Combine all chimichurri ingredients in a bowl. Separately, mix the chipotle mayo ingredients (if using).
  8. To build the sandwich, spread chipotle mayo inside the toasted baguette. Add the onion-cheese mixture, smoked sausage, and chimichurri. Serve and enjoy.

Notes

  • Use a plancha or flat cast iron surface for best caramelization and flavor.
  • Chimichurri and chipotle mayo can be made ahead of time for convenience.
  • Great for game day, cookouts, or hearty dinners.
