Description
This Smoked Sausage Chimichurri Sandwich is the perfect tailgate treatโsmoky Eckrich sausage, caramelized onions, melty provolone, zesty chimichurri, and a kick of chipotle mayo all packed into a toasted French baguette.

- 1 Eckrich Original Skinless Smoked Sausage Rope, cut in half & flayed open
- 2 cups onions, sliced
- 2 tbsp unsalted butter
- 1 tbsp brown sugar
- 3 slices provolone cheese
- French baguette, cut into 6-inch segments and halved
- Chimichurri Ingredients:
- 1/2 cup parsley, chopped
- 3 cloves garlic, pressed
- 3/4 cup olive oil
- 1/4 cup red wine vinegar
- 1 tsp red pepper flakes
- Salt and pepper to taste
- Optional Chipotle Mayo Ingredients:
- Chipotle in adobo sauce, stemmed and pureed
- 1/2 cup mayonnaise
Instructions
- Preheat fire to medium-high heat and place a cast iron pan or plancha over the flame for 1โ2 minutes.
- Add sliced onions with a bit of oil to the skillet and cook for 3โ4 minutes until soft.
- Add the flayed smoked sausage rope and cook for 4 minutes per side.
- Add butter and brown sugar to the onions, letting them caramelize, then top with provolone cheese.
- Remove the sausage and onion-cheese mixture from the skillet.
- Grill baguette segments on the plancha for 2โ3 minutes until lightly toasted.
- Combine all chimichurri ingredients in a bowl. Separately, mix the chipotle mayo ingredients (if using).
- To build the sandwich, spread chipotle mayo inside the toasted baguette. Add the onion-cheese mixture, smoked sausage, and chimichurri. Serve and enjoy.
Notes
- Use a plancha or flat cast iron surface for best caramelization and flavor.
- Chimichurri and chipotle mayo can be made ahead of time for convenience.
- Great for game day, cookouts, or hearty dinners.
