2 1/2 pounds Yukon Gold potatoes, peeled and quartered

1/2 cup sour cream, at room temperature

1/2 to 3/4 cup heavy cream (or half and half), warm
Instructions

Place potatoes in a large pot and cover with cold water. Season with a generous pinch of salt.
