Description

These Meatball Smash Tacos are a delicious twist on traditional tacos, with a combination of lean pork and beef meatballs cooked directly on tortillas. Topped with homemade tomato sauce, Parmesan, and fresh basil, these tacos are a flavorful and satisfying meal.


Ingredients

  • For the Meatballs:

    • 500g lean pork mince

    • 500g lean beef mince

    • 1/2 brown onion, grated

    • 2 garlic cloves, minced

    • 2 tbsp fresh parsley, finely chopped

    • 1/2 cup breadcrumbs

    • 1/4 cup parmesan, grated

    • 1 egg

  • For the Tomato Sauce:

    • 1 tbsp olive oil

    • 2 cloves garlic, minced

    • 1/2 brown onion, chopped

    • 1 can (400g) crushed tomatoes

    • 200g passata

    • 3-4 fresh basil leaves, torn

    • Salt & pepper, to taste

  • For the Topping:

    • Parmesan, grated

    • Fresh basil leaves

 

  • For the Tacos:

    • 8 medium tortillas

    • 2 tbsp olive oil, for cooking tacos


Instructions

  • Make the Tomato Sauce:

    • Heat olive oil in a saucepan over medium heat. Add garlic and onion, sauté for 2-3 minutes until softened.

    • Add crushed tomatoes and passata, stirring to combine.

    • Stir in torn basil leaves and season with salt and pepper to taste. Let the sauce simmer for 15-20 minutes, allowing it to thicken.

  • Prepare the Meatballs:

    • In a large bowl, mix pork and beef mince, grated onion, minced garlic, parsley, breadcrumbs, parmesan, and egg until well combined.

    • Divide the mixture into 8 equal portions and spread each portion over the surface of the tortillas, almost to the edges.

  • Cook the Tacos:

    • Heat olive oil in a non-stick pan over medium heat.

    • Place each tortilla with meatball-side down and cook for about 2 minutes until the meat is cooked through.

    • Flip the tortilla and cook the other side until crisp. Repeat with the remaining tortillas.

  • Assemble the Tacos:

    • Top each taco with the homemade tomato sauce.

    • Sprinkle with grated parmesan and fresh basil leaves.

 

  • Serve:

    • Serve the tacos hot and enjoy!


Notes

  • For an extra crunchy taco, let the tortilla cook a bit longer on each side.

  • Feel free to add a dollop of sour cream or a sprinkle of chili flakes for an added touch.
