These Meatball Smash Tacos are a delicious twist on traditional tacos, with a combination of lean pork and beef meatballs cooked directly on tortillas. Topped with homemade tomato sauce, Parmesan, and fresh basil, these tacos are a flavorful and satisfying meal.

500g lean pork mince

1/2 brown onion, grated

2 garlic cloves, minced

2 tbsp fresh parsley, finely chopped

1/2 cup breadcrumbs

1/4 cup parmesan, grated

1 egg

For the Tomato Sauce:

1 tbsp olive oil

2 cloves garlic, minced

1 can (400g) crushed tomatoes

200g passata
-
3-4 fresh basil leaves, torn

Salt & pepper, to taste

For the Topping:

Parmesan, grated

For the Tacos:

8 medium tortillas

2 tbsp olive oil, for cooking tacos

Instructions

Make the Tomato Sauce:

Heat olive oil in a saucepan over medium heat. Add garlic and onion, sauté for 2-3 minutes until softened.

Add crushed tomatoes and passata, stirring to combine.

Stir in torn basil leaves and season with salt and pepper to taste. Let the sauce simmer for 15-20 minutes, allowing it to thicken.

Prepare the Meatballs:

In a large bowl, mix pork and beef mince, grated onion, minced garlic, parsley, breadcrumbs, parmesan, and egg until well combined.

Divide the mixture into 8 equal portions and spread each portion over the surface of the tortillas, almost to the edges.

Cook the Tacos:

Heat olive oil in a non-stick pan over medium heat.

Place each tortilla with meatball-side down and cook for about 2 minutes until the meat is cooked through.

Flip the tortilla and cook the other side until crisp. Repeat with the remaining tortillas.

Top each taco with the homemade tomato sauce.

Sprinkle with grated parmesan and fresh basil leaves.
