Description

  • 60 g (1/2 cup) all-purpose flour
  • 48 g (1/2 cup) almond flour
  • 21 g (3 tablespoon) powdered sugar
  • 1/4 teaspoon fine sea salt
  • 56 g (4 tablespoon) unsalted butter, cold & cubed
  • 1/2 teaspoon almond extract
  • For the Lemon Filling:
  • 100 g (1/2 cup) granulated sugar
  • Zest of one lemon
  • 8 g (1 tablespoon) cornstarch
  • 1/4 teaspoon fine sea salt
  • 78 g (1/3 cup + 1 tbsp) fresh lemon juice
  • 2 eggs, room temp

Instructions

  1. Preheat your oven to 350°F (175°C). Line a small 8×8-inch baking pan with parchment paper, leaving some overhang for easy removal later.
  2. For the almond shortbread crust: In a food processor, combine all-purpose flour, almond flour, powdered sugar, and salt. Add cold cubed butter and almond extract, pulsing until the mixture resembles coarse crumbs.
  3. Press the crust mixture evenly into the prepared pan. Bake for 12-15 minutes, or until lightly golden around the edges. Remove from the oven and let it cool while you prepare the filling.
  4. For the lemon filling: In a medium bowl, whisk together granulated sugar, lemon zest, cornstarch, and salt. Add fresh lemon juice and eggs, whisking until smooth and combined.
  5. Pour the lemon filling over the cooled shortbread crust. Bake for 18-22 minutes, or until the filling is set but still slightly jiggly in the center.
  6. Allow the lemon bars to cool to room temperature, then refrigerate for at least 2 hours to fully set.
  7. Once chilled, cut into small squares and dust with powdered sugar before serving. Enjoy!
