- 1 pound ground beef
- 1 cup uncooked white rice
- 4 packed cups fresh spinach
- 1 cup finely chopped carrots
- 3 green onions, chopped
- 1/3 cup soy sauce
- 1 tablespoon sesame oil
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 2 tablespoons brown sugar
- 1/2 teaspoon crushed red pepper flakes
- 1/2 teaspoon black pepper
Instructions
- Lightly grease the slow cooker insert and set it to low.
- In a small bowl, mix soy sauce, sesame oil, garlic, ginger, brown sugar, crushed red pepper flakes, and black pepper.
- Spread the uncooked rice evenly in the bottom of the slow cooker.
- Add the ground beef and chopped carrots over the rice.
- Pour the sauce mixture evenly over everything and gently stir to combine.
- Cover and cook on low for 4 hours, until the rice is tender.
- Stir in the fresh spinach and green onions.
- Cover again and cook for an additional 10 minutes until the spinach is wilted.
- Fluff gently, serve warm, and enjoy.
Notes
- Rinse the rice before adding it to prevent excess starch.
- Add spinach only at the end to keep it vibrant and tender.
- Adjust red pepper flakes to control spice level.
