Description

A comforting slow cooker meal made with tender ground beef, fluffy rice, and fresh spinach, all simmered together in a savory Korean inspired sauce that soaks into every bite.


Ingredients

  • 1 pound ground beef
  • 1 cup uncooked white rice
  • 4 packed cups fresh spinach
  • 1 cup finely chopped carrots
  • 3 green onions, chopped
  • 1/3 cup soy sauce
  • 1 tablespoon sesame oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons brown sugar
  • 1/2 teaspoon crushed red pepper flakes
  • 1/2 teaspoon black pepper

Instructions

  1. Lightly grease the slow cooker insert and set it to low.
  2. In a small bowl, mix soy sauce, sesame oil, garlic, ginger, brown sugar, crushed red pepper flakes, and black pepper.
  3. Spread the uncooked rice evenly in the bottom of the slow cooker.
  4. Add the ground beef and chopped carrots over the rice.
  5. Pour the sauce mixture evenly over everything and gently stir to combine.
  6. Cover and cook on low for 4 hours, until the rice is tender.
  7. Stir in the fresh spinach and green onions.
  8. Cover again and cook for an additional 10 minutes until the spinach is wilted.
  9. Fluff gently, serve warm, and enjoy.

Notes

  • Rinse the rice before adding it to prevent excess starch.
  • Add spinach only at the end to keep it vibrant and tender.
  • Adjust red pepper flakes to control spice level.
