- 2 pounds boneless, skinless chicken breasts
- 1/2 teaspoon Italian seasoning
- 1/2 teaspoon black pepper
- 1/2 teaspoon onion powder
- 1/2 teaspoon dried thyme
- 3 teaspoons garlic, minced
- 1/4 cup lemon juice, fresh squeezed
- 1 cup low-sodium chicken broth
- 3 tablespoons butter, cubed
- 8 ounces cream cheese, cubed
- 1 cup heavy cream
- 2 cups fresh spinach, chopped
Instructions
- Place chicken breasts in the bottom of a slow cooker.
- Sprinkle with Italian seasoning, black pepper, onion powder, dried thyme, and minced garlic.
- Pour in lemon juice and chicken broth. Add butter cubes on top.
- Cover and cook on low for 4-6 hours or high for 2-3 hours, until chicken is cooked through and tender.
- Remove the chicken, shred or slice, and set aside.
- Add cream cheese and heavy cream to the slow cooker. Stir until melted and smooth.
- Return the chicken to the slow cooker and stir to coat in the sauce.
- Add chopped spinach and cook for an additional 10-15 minutes until wilted.
- Serve warm with rice, mashed potatoes, or pasta.
Notes
- Use freshly squeezed lemon juice for the best flavor.
- You can substitute kale for spinach if preferred.
- For a thicker sauce, let it cook uncovered for the last 15 minutes.
- This recipe works great for meal prep and reheats well.
