Description

This Slow Cooker Creamy Lemon Herb Chicken is a rich and comforting dish featuring tender chicken breasts simmered in a lemony, herbed cream sauce with spinach. Perfect for an easy hands-off dinner.


Ingredients

  • 2 pounds boneless, skinless chicken breasts
  • 1/2 teaspoon Italian seasoning
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried thyme
  • 3 teaspoons garlic, minced
  • 1/4 cup lemon juice, fresh squeezed
  • 1 cup low-sodium chicken broth
  • 3 tablespoons butter, cubed
  • 8 ounces cream cheese, cubed
  • 1 cup heavy cream
  • 2 cups fresh spinach, chopped

Instructions

  1. Place chicken breasts in the bottom of a slow cooker.
  2. Sprinkle with Italian seasoning, black pepper, onion powder, dried thyme, and minced garlic.
  3. Pour in lemon juice and chicken broth. Add butter cubes on top.
  4. Cover and cook on low for 4-6 hours or high for 2-3 hours, until chicken is cooked through and tender.
  5. Remove the chicken, shred or slice, and set aside.
  6. Add cream cheese and heavy cream to the slow cooker. Stir until melted and smooth.
  7. Return the chicken to the slow cooker and stir to coat in the sauce.
  8. Add chopped spinach and cook for an additional 10-15 minutes until wilted.
  9. Serve warm with rice, mashed potatoes, or pasta.

Notes

  • Use freshly squeezed lemon juice for the best flavor.
  • You can substitute kale for spinach if preferred.
  • For a thicker sauce, let it cook uncovered for the last 15 minutes.
