Description

Ingredients

  • 1 cup + 2 tablespoons all-purpose flour (divided)
  • 1 1/4 cups sugar (divided)
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1 egg
  • 1/4 cup milk
  • 2 tablespoons canola oil
  • 2 Granny Smith apples, peeled and chopped
  • 2 cups cranberries (fresh or frozen)

Instructions

  1. In a bowl, whisk together 1 cup flour, 1 cup sugar, baking powder, and cinnamon.
  2. Add the egg, milk, and canola oil, stirring until a thick batter forms.
  3. In a separate bowl, toss the chopped apples and cranberries with the remaining 2 tablespoons flour and 1/4 cup sugar.
  4. Grease the slow cooker insert lightly.
  5. Spread the fruit mixture evenly into the bottom of the slow cooker.
  6. Spoon the batter over the fruit, spreading gently to cover as much as possible.
  7. Cover and cook on LOW for 3–4 hours, or until the top is set and the fruit is bubbly.
