- 1 (3 pound) beef brisket
- 2 teaspoons smoked paprika
- 2 teaspoons onion powder
- 2 teaspoons garlic powder
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 3 large onions, sliced
- 3 bay leaves
- 2 sprigs thyme
- 4 cups beef stock
- 2 Tablespoons Worcestershire sauce
Instructions
- In a small bowl, combine smoked paprika, onion powder, garlic powder, salt, and pepper. Rub seasoning mixture all over the brisket.
- Place sliced onions in the bottom of the slow cooker. Lay the brisket on top.
- Add bay leaves, thyme sprigs, beef stock, and Worcestershire sauce to the slow cooker.
- Cover and cook on low for 8–10 hours or on high for 4–5 hours, until the brisket is fork-tender.
- Remove brisket from the slow cooker and let it rest for 10 minutes before slicing against the grain.
- Serve warm with the cooked onions and some of the cooking juices spooned over the top.
Notes
- For extra flavor, sear the brisket in a hot skillet before placing it in the slow cooker.
- This recipe works beautifully for tacos, sandwiches, or served alongside mashed potatoes.
- Leftovers keep well in the fridge for up to 4 days or frozen for up to 2 months.
