Ingredients
Scale
- 3 Tbsp. light brown sugar
- 1 Tbsp. garlic powder
- 1 Tbsp. onion powder
- 2 1/2 tsp. kosher salt
- 1 1/2 tsp. black pepper
- 1 tsp. smoked paprika
- 5 lb. bone-in (or 3 to 4 lb. boneless) country-style pork ribs, patted dry
- 1 sweet onion, thinly sliced lengthwise (about 2 1/2 cups)
- 1 (16-oz.) bottle barbecue sauce, divided
- 8 hamburger buns
- Coleslaw (for topping)
- Dill pickle chips (for topping)
Instructions
- In a small bowl, combine the light brown sugar, garlic powder, onion powder, kosher salt, black pepper, and smoked paprika to create the seasoning mix.
- Pat the pork ribs dry with paper towels and rub the seasoning mix evenly over the pork, making sure to coat all sides.
- Place the thinly sliced onion in the bottom of the slow cooker. Place the seasoned pork ribs on top of the onions.
- Pour half of the barbecue sauce over the pork ribs, then cover and cook on low for 6-8 hours or until the pork is tender and easily pulled apart with a fork.
- Once cooked, remove the pork ribs from the slow cooker and discard the bones if using bone-in ribs. Shred the pork using two forks and return the shredded meat to the slow cooker. Stir to combine with the remaining barbecue sauce.
- Toast the hamburger buns, if desired, and then pile the shredded pork onto each bun. Top with coleslaw and dill pickle chips.
- Serve and enjoy your slow-cooked barbecue sandwiches!
Notes
- For a sweeter barbecue flavor, feel free to add more brown sugar to the seasoning mix.
- If you prefer a spicier sandwich, you can add some hot sauce or sliced jalapeรฑos to the finished sandwich.
