These Sloppy Joe Tater Tot Cups are a fun, bite-sized twist on a classic! Crispy tater tots create the perfect crust, filled with savory, tangy Sloppy Joe meat and topped with melted cheddar cheese. Great for game day, parties, or family-friendly dinners, these easy-to-make snacks will be gone in no time!


Ingredients

  • 48 frozen tater tots
  • 1 lb ground beef
  • 1 (8-oz) can tomato sauce
  • 2 tsp Dijon mustard
  • 2 tsp Worcestershire sauce
  • 2 tsp apple cider vinegar
  • 2 tsp brown sugar
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp chili powder
  • 2 tsp cornstarch
  • 2 tsp water
  • 1 cup shredded cheddar cheese

Instructions

Prepare the Tater Tot Cups:

  1. Preheat oven to 425°F (220°C). Grease a mini muffin pan with nonstick spray.
  2. Place 2 frozen tater tots in each muffin cup. Bake for 15 minutes.

Make the Sloppy Joe Filling:

  1. In a large skillet, cook ground beef over medium-high heat until no longer pink. Drain excess grease.
  2. Stir in tomato sauce, Dijon mustard, Worcestershire sauce, apple cider vinegar, brown sugar, garlic powder, onion powder, and chili powder. Season with salt and pepper to taste.
  3. Bring to a boil, then reduce heat and simmer for 5 minutes, until most of the liquid has been absorbed.
  4. In a small bowl, whisk together cornstarch and water to create a slurry. Stir into the skillet and cook until the sauce thickens. Remove from heat.

Assemble & Bake:

  1. Remove the parbaked tater tots from the oven. Using a tart tamper or spoon, press them down into cup shapes.
  2. Fill each tater tot cup with sloppy Joe mixture and sprinkle with cheddar cheese.
  3. Return to the oven and bake for 5-7 minutes, or until the cheese is melted and bubbly.

Notes

  • Make-Ahead Option: Prepare the Sloppy Joe filling a day ahead and store in the fridge for easy assembly.
  • Spicy Kick: Add red pepper flakes or diced jalapeños for extra heat.
