Ingredients

Units Scale
  • 3 tablespoons extra virgin olive oil
  • 2 cups yellow onion, diced (about 1 medium)
  • 1 1/2 cups green bell pepper, diced (about 1 medium)
  • 1/2 cup carrot, diced small (about 1)
  • 1/2 cup celery, diced small (about 1 stalk)
  • 1 tablespoon minced garlic
  • 2 pounds ground beef (80/20)
  • 1 (6-ounce) can tomato paste
  • 2 cups beef broth
  • 1 (14.5-ounce) can diced tomatoes with juice
  • 1/4 cup Worcestershire sauce
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 teaspoon dry mustard
  • 1 teaspoon chili powder
  • 1 teaspoon onion powder
  • 2 tablespoons brown sugar
  • 2 or 3 (1-pound) loaves round dense bread
  • 1 stick butter, melted
  • 4 ounces sharp white cheddar cheese, shredded
  • 4 ounces Monterey Jack cheese, shredded

Instructions

  1. Preheat oven to 375°F and line a baking sheet with parchment paper.
  2. Heat olive oil in a skillet over medium heat. Add onion, bell pepper, carrot, and celery. Cook 5–7 minutes until softened. Add garlic and cook 1 more minute.
  3. Add ground beef and cook until browned. Drain excess fat if needed.
  4. Stir in tomato paste, diced tomatoes with juice, and beef broth. Mix well.
  5. Add Worcestershire sauce, salt, pepper, dry mustard, chili powder, onion powder, and brown sugar. Simmer uncovered for 15–20 minutes until thickened.
  6. Slice tops off bread loaves and hollow out centers, leaving a 1-inch border. Brush inside with melted butter and toast in oven for 5 minutes.
  7. Fill toasted bread bowls with sloppy joe mixture. Top with shredded cheddar and Monterey Jack cheese.
  8. Return to oven for 10 minutes, or until cheese is melted and bubbly.
  9. Let cool slightly before slicing and serving.

Notes

  • Use dense, crusty bread to hold the filling without collapsing.
  • Simmer filling until thick for best texture.
  • Freshly shredded cheese melts better and tastes richer.
  • Save removed bread pieces for dipping or croutons.
