Ina Garten’s Cauliflower Toasts are a warm, comforting twist on traditional toast, featuring roasted cauliflower, creamy mascarpone, Gruyère cheese, and crispy prosciutto atop crusty bread, finished with chives and a sprinkle of sea salt.

- 1 small head cauliflower (2 pounds)
- 4 tablespoons good olive oil
- 1/4 teaspoon crushed red pepper flakes
- Kosher salt and freshly ground black pepper, to taste
- 12 ounces Italian mascarpone cheese, at room temperature
- 6 ounces Gruyère cheese, grated
- 4 ounces thinly sliced prosciutto, julienned
- 1/4 teaspoon ground nutmeg
- 6 large slices country-style bread
- Paprika, to taste
- Freshly grated Italian Parmesan cheese, to taste
- 2 tablespoons minced fresh chives
- Flaked sea salt, such as Maldon, to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Remove the leaves and core from the cauliflower and cut it into large florets.
- Place the florets on a sheet pan, drizzle with olive oil, sprinkle with red pepper flakes, salt, and black pepper. Toss to coat.
- Roast for 25 minutes, tossing halfway through, until the cauliflower is tender and browned in spots. Let cool slightly, then chop coarsely.
- In a large bowl, mix the mascarpone, Gruyère, prosciutto, nutmeg, 1 teaspoon salt, and 1/2 teaspoon black pepper. Stir in the roasted cauliflower.
- Toast the bread slices lightly, then place them on a sheet pan.
- Spread the cauliflower mixture generously over each toast slice.
- Sprinkle the tops with paprika and Parmesan cheese.
- Broil for 2 to 3 minutes, until the topping is heated through and lightly browned.
- Sprinkle with minced chives and flaked sea salt. Serve hot.
Notes
- Always cut cauliflower from the stem end to keep florets intact and minimize mess.
- You can prepare the topping ahead of time and refrigerate until ready to assemble and broil.
- Use a hearty bread that holds up well to the toppings.
