Description

Ina Garten’s Cauliflower Toasts are a warm, comforting twist on traditional toast, featuring roasted cauliflower, creamy mascarpone, Gruyère cheese, and crispy prosciutto atop crusty bread, finished with chives and a sprinkle of sea salt.


Ingredients

  • 1 small head cauliflower (2 pounds)
  • 4 tablespoons good olive oil
  • 1/4 teaspoon crushed red pepper flakes
  • Kosher salt and freshly ground black pepper, to taste
  • 12 ounces Italian mascarpone cheese, at room temperature
  • 6 ounces Gruyère cheese, grated
  • 4 ounces thinly sliced prosciutto, julienned
  • 1/4 teaspoon ground nutmeg
  • 6 large slices country-style bread
  • Paprika, to taste
  • Freshly grated Italian Parmesan cheese, to taste
  • 2 tablespoons minced fresh chives
  • Flaked sea salt, such as Maldon, to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Remove the leaves and core from the cauliflower and cut it into large florets.
  3. Place the florets on a sheet pan, drizzle with olive oil, sprinkle with red pepper flakes, salt, and black pepper. Toss to coat.
  4. Roast for 25 minutes, tossing halfway through, until the cauliflower is tender and browned in spots. Let cool slightly, then chop coarsely.
  5. In a large bowl, mix the mascarpone, Gruyère, prosciutto, nutmeg, 1 teaspoon salt, and 1/2 teaspoon black pepper. Stir in the roasted cauliflower.
  6. Toast the bread slices lightly, then place them on a sheet pan.
  7. Spread the cauliflower mixture generously over each toast slice.
  8. Sprinkle the tops with paprika and Parmesan cheese.
  9. Broil for 2 to 3 minutes, until the topping is heated through and lightly browned.
  10. Sprinkle with minced chives and flaked sea salt. Serve hot.

Notes

  • Always cut cauliflower from the stem end to keep florets intact and minimize mess.
  • You can prepare the topping ahead of time and refrigerate until ready to assemble and broil.
  • Use a hearty bread that holds up well to the toppings.
