Description

This one-pan cheesy skillet lasagna is a quick and easy twist on classic lasagna, packed with savory ground beef, tender pasta, and gooey cheese. Perfect for a weeknight dinner with all the flavors of lasagna, minus the hassle!

Lasagna Base

  • 8 oz medium pasta (rotini, penne, or similar)
  • 1 lb lean ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1/2 green bell pepper, diced
  • 14 oz canned diced tomatoes (with juices)
  • 2 cups pasta sauce
  • 1 tsp Italian seasoning

Cheese Topping

  • 1 cup ricotta cheese
  • 1/4 cup shredded Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1 tsp fresh basil, thinly sliced (optional garnish)
  • 1 tsp fresh parsley, chopped (optional garnish)

Instructions

tep 1: Cook the Beef & Pasta

  1. In a large skillet, brown the ground beef, onion, and garlic over medium-high heat until no pink remains. Drain excess fat.
  2. Meanwhile, cook the pasta in salted water until al dente. Drain but do not rinse.

Step 2: Simmer the Sauce

  1. Add the diced green bell pepper to the skillet and cook for 3-4 minutes, until softened.
  2. Stir in the diced tomatoes, pasta sauce, and Italian seasoning. Simmer for 5 minutes, until thickened.

Step 3: Combine & Add Cheese

  1. Stir the cooked pasta into the skillet and let it simmer for 2-3 minutes, until heated through.
  2. In a small bowl, mix ricotta and Parmesan cheese.
  3. Add dollops of ricotta mixture on top of the pasta, then sprinkle mozzarella cheese around it.
  4. Cover and cook for a few minutes until the cheese is melted.

Step 4: Garnish & Serve

  1. Sprinkle with fresh basil and parsley, if desired.
  2. Serve hot and enjoy!

Notes

  • Protein Swap: Try ground turkey or Italian sausage for a variation.
  • Make It Spicy: Add red pepper flakes for extra heat.
  • Storage: Refrigerate leftovers for up to 3 days. Reheat on the stovetop with a splash of water.
