- 1 1/2 pounds boneless, skinless chicken breast, cut into 3/4 to 1-inch bite-sized chunks
- 1 pound kielbasa, sliced 1/4 to 1/3-inch thick
- 1 medium onion, coarsely chopped
- 1 large bell pepper (any color), cut into 3/4-inch pieces
- 1 packed tablespoon chopped garlic (about 3 cloves)
- 2 1/4 cups less-sodium chicken broth
- 1 1/2 teaspoons sodium-free chicken bouillon
- 1 1/2 tablespoons Cajun seasoning
- 1 tablespoon salt-free Dash lemon pepper seasoning blend
- 1 teaspoon paprika
- 3/4 teaspoon salt
- 1/2 teaspoon black pepper
- 3/4 teaspoon garlic powder
- 3/4 teaspoon onion powder
- 1/4 cup cornstarch
- 2 1/2 tablespoons extra virgin olive oil, divided
Instructions
- Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add chicken and sear until lightly browned but not fully cooked. Remove and set aside.
- In the same skillet, add remaining olive oil and sauté onion, bell pepper, and garlic until softened.
- Add sliced kielbasa and cook for 2–3 minutes until slightly browned.
- Return chicken to the skillet and sprinkle with Cajun seasoning, lemon pepper, paprika, salt, black pepper, garlic powder, and onion powder. Stir to coat evenly.
- In a small bowl, whisk chicken broth, chicken bouillon, and cornstarch until smooth. Pour into the skillet and bring to a simmer.
- Cook for 5–7 minutes, stirring occasionally, until sauce thickens and chicken is cooked through.
- Adjust seasoning if needed and serve hot.
Notes
- Use less-sodium chicken broth to control salt levels.
- Can be served over rice, pasta, or with crusty bread.
- Adjust Cajun seasoning to taste for more or less heat.
