Description

Skillet Chicken Kielbasa and Bell Pepper is a quick, flavorful one-pan dish featuring juicy chicken, savory kielbasa, and colorful bell peppers simmered in a seasoned chicken broth. Perfect for an easy weeknight dinner.


Ingredients

  • 1 1/2 pounds boneless, skinless chicken breast, cut into 3/4 to 1-inch bite-sized chunks
  • 1 pound kielbasa, sliced 1/4 to 1/3-inch thick
  • 1 medium onion, coarsely chopped
  • 1 large bell pepper (any color), cut into 3/4-inch pieces
  • 1 packed tablespoon chopped garlic (about 3 cloves)
  • 2 1/4 cups less-sodium chicken broth
  • 1 1/2 teaspoons sodium-free chicken bouillon
  • 1 1/2 tablespoons Cajun seasoning
  • 1 tablespoon salt-free Dash lemon pepper seasoning blend
  • 1 teaspoon paprika
  • 3/4 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3/4 teaspoon garlic powder
  • 3/4 teaspoon onion powder
  • 1/4 cup cornstarch
  • 2 1/2 tablespoons extra virgin olive oil, divided

Instructions

  1. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add chicken and sear until lightly browned but not fully cooked. Remove and set aside.
  2. In the same skillet, add remaining olive oil and sauté onion, bell pepper, and garlic until softened.
  3. Add sliced kielbasa and cook for 2–3 minutes until slightly browned.
  4. Return chicken to the skillet and sprinkle with Cajun seasoning, lemon pepper, paprika, salt, black pepper, garlic powder, and onion powder. Stir to coat evenly.
  5. In a small bowl, whisk chicken broth, chicken bouillon, and cornstarch until smooth. Pour into the skillet and bring to a simmer.
  6. Cook for 5–7 minutes, stirring occasionally, until sauce thickens and chicken is cooked through.
  7. Adjust seasoning if needed and serve hot.

Notes

  • Use less-sodium chicken broth to control salt levels.
  • Can be served over rice, pasta, or with crusty bread.
  • Adjust Cajun seasoning to taste for more or less heat.
