Description

Ingredients

  • 1 medium cauliflower, cut into florets
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, thinly sliced
  • 1/4 cup Kalamata olives, pitted and sliced
  • 1/4 cup fresh parsley, chopped
  • 2 tbsp olive oil
  • 1 tbsp red wine vinegar
  • 1 tsp dried oregano

Instructions

  • Combine & marinate: Pour the dressing over the cauliflower mixture and toss gently. Let sit for 10-15 minutes to enhance the flavors.
