Description

This quick and healthy Shrimp Saganaki features tender shrimp simmered in a rich tomato sauce with briny olives and creamy feta. A Mediterranean diet favorite, perfect as an appetizer or main dish!


Ingredients

  • 1 tablespoon olive oil
  • 1/4 cup shallot, chopped
  • 3 cloves garlic, chopped
  • 2 cups cherry tomatoes, halved
  • 1/3 cup kalamata olives, halved
  • 1 1/4 lb jumbo shrimp, peeled and deveined
  • 1 lemon, zest and juice
  • 1/4 cup fresh dill, finely chopped
  • 6 ounces feta cheese, cubed into small pieces

Instructions

  • Heat olive oil in a deep skillet over medium heat. Add shallot and garlic, cooking until fragrant, about 2-3 minutes.
  • Add cherry tomatoes and cook, stirring often, until they burst, about 5-6 minutes.
  • Stir in olives and ¾ cup water. Reduce heat to medium-low and simmer until the sauce thickens, about 2-3 minutes.
  • Nestle shrimp into the sauce, cover, and cook until shrimp turn pink, about 3 minutes.
  • Stir in lemon zest, lemon juice, and fresh dill. Top with feta cheese and serve immediately.

Notes

  • Serve with crusty bread, orzo, or over rice for a heartier meal.
  • Adjust salt as needed; feta and olives add natural saltiness.
  • Add a pinch of red pepper flakes for a spicy kick.
