This quick and healthy Shrimp Saganaki features tender shrimp simmered in a rich tomato sauce with briny olives and creamy feta. A Mediterranean diet favorite, perfect as an appetizer or main dish!

- 1 tablespoon olive oil
- 1/4 cup shallot, chopped
- 3 cloves garlic, chopped
- 2 cups cherry tomatoes, halved
- 1/3 cup kalamata olives, halved
- 1 1/4 lb jumbo shrimp, peeled and deveined
- 1 lemon, zest and juice
- 1/4 cup fresh dill, finely chopped
- 6 ounces feta cheese, cubed into small pieces
Instructions
- Heat olive oil in a deep skillet over medium heat. Add shallot and garlic, cooking until fragrant, about 2-3 minutes.
- Add cherry tomatoes and cook, stirring often, until they burst, about 5-6 minutes.
- Stir in olives and ¾ cup water. Reduce heat to medium-low and simmer until the sauce thickens, about 2-3 minutes.
- Nestle shrimp into the sauce, cover, and cook until shrimp turn pink, about 3 minutes.
- Stir in lemon zest, lemon juice, and fresh dill. Top with feta cheese and serve immediately.
Notes
- Serve with crusty bread, orzo, or over rice for a heartier meal.
- Adjust salt as needed; feta and olives add natural saltiness.
- Add a pinch of red pepper flakes for a spicy kick.
