Description

Shrimp and Chorizo Nachos with Fresh Pico de Gallo are a flavorful gluten-free snack or appetizer featuring spicy chorizo, tender shrimp, melted cheeses, and fresh, zesty pico de gallo.


Ingredients

  • 6 gluten-free corn tortillas, cut into quarters OR 24 gluten-free corn tortilla chips
  • 7 oz gluten-free Mexican pork chorizo
  • 1/2 lb shrimp, peeled, deveined, and chopped
  • 3 oz freshly shredded Pepper Jack cheese
  • 3 oz freshly shredded Queso Quesadilla or Monterey Jack
  • 1 avocado, chopped
  • 1 green onion, chopped
  • Fresh Pico de Gallo:
  • 2 vine-ripened tomatoes, seeded and chopped
  • 1/4 white onion, minced
  • 1/2 jalapeño, seeded and minced (adjust to taste)
  • 1/4 cup packed cilantro, chopped
  • Juice of 1/2 lime
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cook chorizo in a skillet over medium heat until browned and fully cooked. Remove and set aside.
  3. In the same skillet, cook chopped shrimp until pink and cooked through, about 2-3 minutes. Set aside.
  4. If using corn tortillas, bake or fry quarters until crispy, or use pre-made tortilla chips.
  5. Arrange tortilla chips on a baking sheet or oven-safe dish. Sprinkle cooked chorizo and shrimp evenly over the chips.
  6. Top with shredded Pepper Jack and Queso Quesadilla (or Monterey Jack) cheese.
  7. Bake for 5-7 minutes, until cheese is melted and bubbly.
  8. Prepare pico de gallo by combining tomatoes, white onion, jalapeño, cilantro, lime juice, salt, and pepper in a bowl.
  9. Remove nachos from oven and top with chopped avocado, green onions, and fresh pico de gallo.
  10. Serve immediately while warm.

Notes

  • Adjust jalapeño amount to control spice level.
  • For extra crunch, lightly toast the tortilla chips before assembling.
  • Use fresh cheeses for best melting and flavor.
  • Optional: add a dollop of sour cream or drizzle of hot sauce for extra flavor.
