Description

This Shepherd’s Pie Baked Potato combines the comforting flavors of a classic shepherd’s pie with a crispy baked potato base. Creamy mashed potatoes, savory ground beef, and melted cheese create a hearty and satisfying meal. Perfect for a cozy dinner!

  • 4 large russet potatoes
  • 1 lb ground chuck
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 can (15 oz) corn, drained
  • 1/2 cup heavy whipping cream
  • 2 tbsp butter
  • 1 tsp salt (or to taste)
  • 1/2 tsp black pepper
  • 1 tsp Slap Ya Mama seasoning (or Cajun seasoning)
  • 1/2 cup shredded cheese (cheddar or your choice)
  • 1/2 cup seasoning blend (onions, bell peppers, celery, etc.)
  • 1 tsp garlic Parmesan dry seasoning

Instructions

  • Bake the Potatoes: Preheat oven to 400°F (200°C). Pierce potatoes with a fork and bake for 50-60 minutes, or until soft.
  • Prepare Mashed Potatoes: Cut open the baked potatoes and scoop out the insides into a bowl. Mash with butter, heavy whipping cream, salt, pepper, and seasoning blend. Set aside.
  • Cook the Beef Mixture: In a skillet over medium heat, brown the ground chuck. Drain excess fat if needed. Add the cream of mushroom soup and mix well.
  • Add Seasonings and Corn: Stir in the drained corn, salt, pepper, Slap Ya Mama seasoning, and garlic Parmesan dry seasoning. Let it simmer for a few minutes.
  • Assemble the Potatoes: Spoon the beef mixture into the mashed potatoes, mixing gently. Refill the potato skins with the mixture.
  • Top and Broil: Sprinkle shredded cheese on top. Place the potatoes under the broiler for 2-3 minutes, or until cheese is melted and bubbly.
