Description

This Sheet-Pan Chicken Potpie is an easy, comforting take on a classic favorite. Tender rotisserie chicken, mixed vegetables, and a creamy sauce are baked under a flaky puff pastry for a delicious one-pan meal perfect for weeknight dinners or casual gatherings.

  • 1 cup chopped onion
  • 1 cup chopped celery

  • 1/3 cup all-purpose flour
  • 2-1/2 cups reduced-sodium chicken broth
  • 1/2 cup heavy whipping cream
  • 1 teaspoon minced fresh thyme
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 3 cups shredded rotisserie chicken
  • 1 package (10 ounces) frozen mixed vegetables
  • 1 package (17.3 ounces) frozen puff pastry, thawed
  • All-purpose flour, for dusting
  • 1 large egg, room temperature, beaten

Instructions

  1. Preheat oven to 400°F (200°C) and lightly grease a 9×13-inch baking dish.
  2. In a large skillet, melt butter over medium heat. Add chopped onion, celery, and garlic; sauté for 4–5 minutes until softened.
  3. Stir in flour and cook for 1–2 minutes until lightly golden.
  4. Gradually whisk in chicken broth and heavy cream until smooth. Cook for 5–7 minutes, stirring frequently, until the mixture thickens.
  5. Add thyme, salt, pepper, shredded chicken, and frozen mixed vegetables. Stir to combine and remove from heat.
  6. Transfer the chicken and vegetable mixture to the prepared baking dish.
  7. Roll out the thawed puff pastry on a lightly floured surface to fit the dish. Place over the filling and trim any excess. Brush the top with beaten egg for a golden finish.
  8. Bake for 25–30 minutes, or until the puff pastry is golden brown and the filling is bubbly.
  9. Let rest for 5 minutes before serving.

Notes

  • Use rotisserie chicken for a time-saving option; leftover chicken works well too.
  • You can swap frozen mixed vegetables for fresh vegetables if preferred.
  • Ensure puff pastry is fully thawed to prevent cracking when covering the filling.
