Description

Juicy, spiced Seekh Kebabs made with ground beef, herbs, and warming spices. These grilled or pan-seared skewers are packed with flavor and perfect for wraps, platters, or dipping.

Ingredients

Units Scale
  • 1.5 pounds ground beef (or substitute with ground lamb)
  • 1/2 small onion, finely chopped
  • 1 tablespoon garlic, crushed
  • 1 tablespoon ginger, peeled and crushed
  • 1/2-1 serrano chili pepper, finely chopped
  • 1/3 cup cilantro, finely chopped
  • 2 tablespoons fresh mint, finely chopped
  • 1.5 teaspoons salt
  • 1 teaspoon pepper
  • 1.5 teaspoons Kashmiri red chili powder (or substitute with paprika)
  • 1.5 teaspoons red chili flakes
  • 1.5 teaspoons cumin powder
  • 1.5 teaspoons coriander powder
  • 1.5 teaspoons garam masala powder
  • 1/2 teaspoon baking soda
  • 1 tablespoon oil + more for brushing during cooking

Instructions

  1. In a large bowl, mix ground beef with all other ingredients until well combined and sticky.
  2. Oil your hands and shape the mixture into long kebabs, pressing onto skewers or forming logs.
  3. Chill for 15–20 minutes to help hold shape.
  4. Grill, pan-sear, or bake at 400°F (200°C), turning occasionally and brushing with oil, for 10–12 minutes until cooked through.
  5. Let rest a few minutes before serving with dips or flatbreads.

Notes

  • Use cold meat and chill shaped kebabs to help them stay intact during cooking.
  • Adjust spice level by controlling the chili pepper and flakes.
  • Use parchment and a wire rack for oven baking to promote even browning.
  • Soak wooden skewers in water before grilling to prevent burning.
