Description

Flaky puff pastry parcels filled with creamy scrambled eggs, diced ham, and fresh herbs, baked to golden perfection for a savory breakfast or brunch.

Ingredients

Units Scale
  • 1 sheet puff pastry, thawed
  • 4 large eggs
  • 1/4 cup whole milk
  • 1 tablespoon unsalted butter
  • 1/2 cup diced ham
  • 2 tablespoons fresh herbs, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup all purpose flour for dusting

Instructions

  1. Preheat oven to 375°F and line a baking sheet with parchment paper.
  2. In a skillet, melt butter over medium heat. Whisk eggs with milk, salt, and pepper, then gently cook until slightly underdone.
  3. Remove eggs from heat and stir in diced ham and chopped herbs.
  4. Roll out puff pastry and cut into rectangles. Spoon egg mixture down the center and fold pastry over, sealing edges.
  5. Place pastries on the prepared baking sheet and brush lightly with milk or egg wash if desired.
  6. Bake for 20–25 minutes until pastry is golden and puffed.
  7. Let cool slightly before slicing and serving warm.

Notes

  • Use cold puff pastry to maintain flakiness.
  • Do not overcook eggs before baking; they will finish cooking in the oven.
  • Slice carefully to keep the filling intact.
