Love Scotcheroos? These Scotcheroo Truffles take the classic peanut butter, butterscotch, and chocolate combo to a whole new level! With a crispy, creamy center and a rich chocolate coating, theyโ€™re the perfect bite-sized treat. Ideal for holiday platters, gift-giving, or a sweet snack anytime.


Ingredients

  • 1 cup creamy peanut butter
  • 1 cup powdered sugar, sifted
  • 2 tbsp butter, softened
  • 1 1/2 cups rice crispy cereal
  • 1 cup semisweet chocolate chips (or melting wafers)

  • 1 cup butterscotch chips (+ 1/4 cup for drizzling, optional)

Instructions

Make the Truffle Dough:

  1. In a mixing bowl, combine peanut butter, butter, and powdered sugar until smooth.
  2. Stir in rice crispy cereal until fully incorporated.

Shape & Chill:

  1. Roll the mixture into 1-inch balls and place them on a parchment-lined baking sheet.
  2. Freeze for 1 hour to firm up.

Dip in Chocolate:

  1. Melt chocolate and butterscotch chips using a double boiler or microwave in 30-second intervals, stirring until smooth.
  2. Dip each frozen truffle into the melted mixture, letting excess drip off.
  3. Place back on the baking sheet and let set.

Optional Butterscotch Drizzle:

  1. Melt ยผ cup butterscotch chips and drizzle over truffles for extra flavor.

Set & Serve:

  1. Allow truffles to set at room temperature or in the refrigerator before serving.

Notes
