- 1 cup powdered sugar, sifted
- 2 tbsp butter, softened
- 1 1/2 cups rice crispy cereal
- 1 cup semisweet chocolate chips (or melting wafers)

- 1 cup butterscotch chips (+ 1/4 cup for drizzling, optional)
Instructions
Make the Truffle Dough:
- In a mixing bowl, combine peanut butter, butter, and powdered sugar until smooth.
- Stir in rice crispy cereal until fully incorporated.
Shape & Chill:
- Roll the mixture into 1-inch balls and place them on a parchment-lined baking sheet.
- Freeze for 1 hour to firm up.
Dip in Chocolate:
- Melt chocolate and butterscotch chips using a double boiler or microwave in 30-second intervals, stirring until smooth.
- Dip each frozen truffle into the melted mixture, letting excess drip off.
- Place back on the baking sheet and let set.
Optional Butterscotch Drizzle:
- Melt ยผ cup butterscotch chips and drizzle over truffles for extra flavor.
Set & Serve:
- Allow truffles to set at room temperature or in the refrigerator before serving.
