- 3 eggs
- 250 g day-old French bread, cubed (about half a large loaf)
- 2 teaspoons Dijon mustard
- 1/4 teaspoon onion powder
- 2 tablespoons fresh chives, chopped
- 1 cup milk (2% or 3.25%)
- 3 ounces Gruyere cheese, shredded (a bit more than 1/3 cup)
- Salt and black pepper, to taste
Instructions
- In a mixing bowl, whisk together eggs, milk, Dijon mustard, onion powder, salt, and pepper until smooth.
- Lightly grease a baking dish. Add cubed bread and pour the egg mixture evenly over the top. Press gently to help the bread absorb the custard.
- Sprinkle shredded Gruyere and chopped chives evenly over the top.
- Cover and refrigerate overnight (or at least 4 hours).
- Preheat oven to 350°F (175°C). Bake uncovered for 30–35 minutes until puffed and golden.
- Cool slightly, garnish with extra chives, and serve warm.
Notes
- Use day-old bread for the best texture—it won’t turn mushy.
- Let the bake rest for 10 minutes after removing from the oven before slicing.
- For extra flavor, add a pinch of nutmeg or caramelized onions.
- Can be prepped ahead and stored overnight before baking.
