- 1 lb hot Italian sausage
- 1 tbsp olive oil
- 1 yellow onion, chopped
- 3 cloves garlic, minced
- 1 cup dry white wine (optional, see note)
- 14.5 oz fire-roasted chopped tomatoes
- 2 cups cauliflower, cut into 1-inch florets
- 2 carrots, peeled and sliced into 1/2-inch coins
- 4 celery stalks, chopped into 1/2-inch pieces
- 6 cups chicken stock
- 1 tsp kosher salt
- 2 tsp black pepper
- 2 cups spinach leaves, chopped
- 2 zucchini, chopped
- 9 oz fresh tortellini (cheese or meat-filled)
- 1/2 cup pesto
Instructions
- Heat a large Dutch oven over medium heat. Add olive oil and sautรฉ onions for 3 minutes. Stir in garlic and cook for another 2 minutes.
- Add sausage, breaking it into medium-sized chunks. Cook for 6-8 minutes, stirring often, until browned.
- Pour in white wine to deglaze the pan, scraping up any browned bits. Let it cook for 2 minutes.
- Add fire-roasted tomatoes, cauliflower, carrots, celery, and chicken stock. Stir in salt and pepper. Bring to a boil, then cover and simmer on medium-low heat for 10 minutes.
- Uncover and add spinach, zucchini, and tortellini. Cook uncovered for 4 minutes until tortellini is tender.
- Stir in pesto just before serving. Ladle into bowls and top with shredded Parmesan cheese if desired.
Notes
- White Wine Substitute: If you prefer, you can replace white wine with an equal amount of chicken broth.
- Tortellini Options: Cheese or meat-filled tortellini both work well.
- Storage: Leftovers can be stored in an airtight container in the fridge for up to 3 days. The tortellini may absorb broth, so add extra stock when reheating.
