  • 1 lb hot Italian sausage
  • 1 tbsp olive oil
  • 1 yellow onion, chopped
  • 3 cloves garlic, minced
  • 1 cup dry white wine (optional, see note)
  • 14.5 oz fire-roasted chopped tomatoes
  • 2 cups cauliflower, cut into 1-inch florets
  • 2 carrots, peeled and sliced into 1/2-inch coins
  • 4 celery stalks, chopped into 1/2-inch pieces
  • 6 cups chicken stock
  • 1 tsp kosher salt
  • 2 tsp black pepper
  • 2 cups spinach leaves, chopped
  • 2 zucchini, chopped
  • 9 oz fresh tortellini (cheese or meat-filled)
  • 1/2 cup pesto

Instructions

  • Heat a large Dutch oven over medium heat. Add olive oil and sautรฉ onions for 3 minutes. Stir in garlic and cook for another 2 minutes.
  • Add sausage, breaking it into medium-sized chunks. Cook for 6-8 minutes, stirring often, until browned.
  • Pour in white wine to deglaze the pan, scraping up any browned bits. Let it cook for 2 minutes.
  • Add fire-roasted tomatoes, cauliflower, carrots, celery, and chicken stock. Stir in salt and pepper. Bring to a boil, then cover and simmer on medium-low heat for 10 minutes.
  • Uncover and add spinach, zucchini, and tortellini. Cook uncovered for 4 minutes until tortellini is tender.
  • Stir in pesto just before serving. Ladle into bowls and top with shredded Parmesan cheese if desired.

Notes

  • White Wine Substitute: If you prefer, you can replace white wine with an equal amount of chicken broth.
  • Tortellini Options: Cheese or meat-filled tortellini both work well.
  • Storage: Leftovers can be stored in an airtight container in the fridge for up to 3 days. The tortellini may absorb broth, so add extra stock when reheating.
