- 3 large eggs
- 1 1/4 cups milk
- 2 tablespoons maple syrup
- 2 cups Kodiak buttermilk pancake mix
- 1 cup spinach, chopped
- 1 cup any cooked sausage, chopped or sautรฉed
- 3/4 cup cheddar cheese, grated
- 1/4 teaspoon salt
- 1/2 teaspoon ground black pepper
Instructions
- Preheat oven to 400ยฐF and line a muffin tin with parchment paper liners. Set aside.
- In a large bowl, whisk together the eggs, milk, maple syrup, pancake mix, salt, and pepper.
- Add the chopped spinach, cooked sausage, and grated cheese. Stir with a spatula to combine.
- Divide the batter evenly between the muffin pan openings.
- Bake for 10 minutes, then reduce the oven temperature to 375ยฐF and bake for an additional 10 minutes, or until a toothpick inserted in the center comes out clean.
- Remove from the oven and enjoy warm.
Notes
- Do not overbake to prevent muffins from drying out.
- You can use turkey sausage or plant-based sausage for a healthier or vegetarian option.
