  • 2 breakfast sausage links, cooked and crumbled
  • 4 ounces cream cheese, softened

  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon vanilla extract
  • 2 tablespoons butter (for frying)

Instructions

Prepare the Filling:

  1. Cook the sausage links in a skillet over medium heat until browned and fully cooked. Crumble the sausage into small pieces and set aside to cool.
  2. In a small bowl, mix the softened cream cheese and shredded cheddar cheese until well combined. Stir in the crumbled sausage.

Assemble the Roll-Ups:

  1. Trim the crusts off the bread slices and gently roll each slice flat with a rolling pin.
  2. Spread a generous spoonful of the sausage-cream cheese mixture onto each slice of bread, then roll them up tightly.

Prepare the Coating:

  1. In a shallow bowl, whisk together the eggs, milk, cinnamon, and vanilla extract until smooth.

Cook the Roll-Ups:

  1. Heat a large skillet over medium heat and add the butter to coat the bottom of the pan.
  2. Dip each roll-up into the egg mixture, coating all sides evenly, and then place them in the skillet. Cook for 2-3 minutes on each side, or until golden brown and crispy.
  3. Remove the roll-ups from the skillet and place them on a paper towel-lined plate to drain any excess butter.
