For the Raspberry Jam:
- 12 oz fresh or frozen raspberries
- 1 cup granulated sugar
- 1/2 cup honey
- 1 tbsp lemon juice
- 2 tbsp corn starch
- 1 1/2โ2 tbsp water (for slurry)
For the Sandwich Heart Cookies with Jam:
- 2 sticks unsalted butter (1 cup)
- 1 cup granulated sugar
- 1 large egg
- 1 tbsp vanilla extract
- 3 cups all-purpose flour
- 1/4 tsp baking powder
- 1/4 tsp fine salt
- 1/4โ1/3 cup powdered sugar (for dusting)
Instructions
- Make the Raspberry Jam: In a saucepan, combine raspberries, sugar, honey, and lemon juice. Stir over medium heat until sugar dissolves. Bring to a low boil, then reduce to a simmer and cook for 15 minutes.
- Mix corn starch and water to form a slurry, then add to the simmering jam. Cook another 5 minutes until thickened. Remove from heat and cool completely. Refrigerate until ready to use.
- Make the Cookie Dough: Preheat oven to 375ยฐF (190ยฐC). Cream butter and sugar with a mixer for 3 minutes.
- In a small bowl, whisk egg and vanilla. In another bowl, combine flour, baking powder, and salt. Add egg mixture to butter mixture and mix well.
- Gradually add dry ingredients and mix until a dough forms. Roll out half the dough on floured parchment paper.
- Use a large heart-shaped cutter to cut cookies. Use a smaller cutter to cut out the center of half of them.
- Place cookies on a parchment-lined baking sheet. Bake for 9โ10 minutes until set. Let cool on sheet briefly before transferring to wire rack.
- Assemble: Once cooled, spread raspberry jam on the full heart cookies. Top with the heart cut-out cookies. Dust with powdered sugar.
Notes
- Cookies can be made ahead and stored in an airtight container.
- Raspberry jam can be made in advance and refrigerated for up to 1 week.
- Dust cookies with powdered sugar just before serving for best presentation.
