For the Raspberry Jam:

  • 1 cup granulated sugar
  • 1/2 cup honey
  • 1 tbsp lemon juice
  • 2 tbsp corn starch
  • 1 1/2โ€“2 tbsp water (for slurry)

For the Sandwich Heart Cookies with Jam:

  • 2 sticks unsalted butter (1 cup)
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tbsp vanilla extract
  • 3 cups all-purpose flour
  • 1/4 tsp baking powder
  • 1/4 tsp fine salt
  • 1/4โ€“1/3 cup powdered sugar (for dusting)

Instructions

  1. Make the Raspberry Jam: In a saucepan, combine raspberries, sugar, honey, and lemon juice. Stir over medium heat until sugar dissolves. Bring to a low boil, then reduce to a simmer and cook for 15 minutes.
  2. Mix corn starch and water to form a slurry, then add to the simmering jam. Cook another 5 minutes until thickened. Remove from heat and cool completely. Refrigerate until ready to use.
  3. Make the Cookie Dough: Preheat oven to 375ยฐF (190ยฐC). Cream butter and sugar with a mixer for 3 minutes.
  4. In a small bowl, whisk egg and vanilla. In another bowl, combine flour, baking powder, and salt. Add egg mixture to butter mixture and mix well.
  5. Gradually add dry ingredients and mix until a dough forms. Roll out half the dough on floured parchment paper.
  6. Use a large heart-shaped cutter to cut cookies. Use a smaller cutter to cut out the center of half of them.
  7. Place cookies on a parchment-lined baking sheet. Bake for 9โ€“10 minutes until set. Let cool on sheet briefly before transferring to wire rack.
  8. Assemble: Once cooled, spread raspberry jam on the full heart cookies. Top with the heart cut-out cookies. Dust with powdered sugar.

  • Cookies can be made ahead and stored in an airtight container.
  • Raspberry jam can be made in advance and refrigerated for up to 1 week.
