Description

These Samoa Rice Krispie Treats are a delicious combination of toasted coconut, caramel, and the classic marshmallow Rice Krispie treat, inspired by the Girl Scout Samoa cookie. A perfect indulgence for any occasion.


Ingredients

  • 5 cups mini marshmallows
  • 3 tablespoons butter
  • 6 cups Rice Krispie cereal
  • 14 oz bag sweetened shredded coconut
  • 2 tablespoons milk
  • 1 (13.4 oz) can dulce de leche
  • 6 oz semisweet chocolate, melted

Instructions

  1. In a large saute pan, pour the entire bag of shredded coconut and cook over medium-high heat, stirring constantly until most of it is golden brown. Remove from heat and stir for another 2 minutes.
  2. Once the coconut is toasted, remove ยฝ cup and set aside.
  3. Heat the dulce de leche with 2 tablespoons of milk in a microwave-safe bowl for 1-1ยฝ minutes to thin it out.
  4. Mix the dulce de leche mixture with the remaining toasted coconut.
  5. In another large microwavable bowl, melt the marshmallows and butter for about 2 minutes, then mix together.
  6. Pour in the Rice Krispie cereal and mix well.
  7. In a greased 8ร—12 inch pan, press half of the cereal mixture into the bottom, then spread the caramel coconut mixture over it. Press the remaining cereal mixture on top.
  8. Melt the semisweet chocolate and spread it over the top of the treat. Garnish with the reserved toasted coconut.
  9. Wait for the chocolate to harden before serving.

Notes

  • Be careful not to burn the coconut while toasting it. Stir constantly and remove from heat once it turns golden.
  • Spray your hands with cooking spray to make it easier to press the mixture into the pan without it sticking.
