- 4 salmon fillets (approximately 150g each)
- 500g new potatoes, halved
- 2 tablespoons olive oil
- 2 tablespoons everything bagel seasoning
- 1 red onion, thinly sliced
- 120ml white wine vinegar
- 1 tablespoon sugar
- 1 teaspoon salt
- Fresh dill, chopped (for garnish)
- Salt and pepper to taste
Instructions
- Preheat the oven to 200ยฐC (400ยฐF).
- In a bowl, toss the halved new potatoes with 1 tablespoon of olive oil and 1 tablespoon of everything bagel seasoning. Spread them on a baking sheet and roast for 20 minutes.
- While the potatoes are roasting, prepare the pickled onions by combining the white wine vinegar, sugar, and salt in a small saucepan. Bring to a simmer, then pour over the sliced red onions in a bowl. Let them sit for at least 15 minutes.
- After the potatoes have roasted for 20 minutes, remove the baking sheet from the oven. Push the potatoes to the sides and place the salmon fillets in the center. Drizzle the salmon with the remaining olive oil and sprinkle with the remaining everything bagel seasoning.
- Return the baking sheet to the oven and roast for an additional 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
- Remove from the oven and let rest for a few minutes. Serve the salmon and potatoes topped with the pickled onions and a sprinkle of fresh dill.
Notes
- For a spicier kick, add a pinch of red pepper flakes to the pickling liquid.
- Leftover pickled onions can be stored in the refrigerator for up to a week and used in other dishes.
- Ensure the salmon is at room temperature before roasting for even cooking.
