- 4 slices salami (your choice of type)

- 1 tbsp butter
- Optional: Chives, finely chopped, for garnish

Instructions

Prepare the Croissants:
- Preheat oven to 350ยฐF (175ยฐC).
- If using slightly day-old croissants, warm them in the oven for a few minutes to refresh them.
- Carefully slice croissants horizontally, leaving them attached at the back.

Cook the Eggs:
- In a bowl, whisk together eggs, milk or cream, salt, and pepper.
- Melt butter in a non-stick skillet over medium-low heat.
- Pour in the egg mixture and gently scramble until just set but still soft. Remove from heat.

Assemble the Sandwiches:
- If using, spread Dijon mustard or mayonnaise on the bottom halves of the croissants.
- Layer each croissant with salami, scrambled eggs, and cheese.
- Place the croissant tops back on.
