Description

Russian Olivier Salad, also known as Russian potato salad, is a creamy and hearty dish with diced potatoes, carrots, peas, and pickles, all mixed together with a mayonnaise and Greek yogurt dressing. Perfect for festive gatherings or a refreshing side dish.


Ingredients

  • 2 large russet potatoes, peeled and diced into small cubes
  • 1 large carrot, peeled and diced into small cubes
  • 1 cup canned green peas
  • 1/2 cup dill pickles, diced
  • 1/3 cup mayonnaise
  • 1/3 cup Greek yogurt
  • 1 teaspoon kosher salt
  • 1/4 teaspoon black pepper

Instructions

  1. Place the diced potatoes and carrots in a pot of water and bring to a boil. Cook for about 10-12 minutes, or until tender but still firm. Drain and set aside to cool.
  2. In a large mixing bowl, combine the cooked potatoes, carrots, green peas, and dill pickles.
  3. In a separate small bowl, mix the mayonnaise, Greek yogurt, kosher salt, and black pepper until smooth.
  4. Pour the dressing over the vegetable mixture and stir gently to combine.
  5. Chill the salad in the refrigerator for at least 1 hour before serving to allow the flavors to meld together.
  6. Serve cold as a side dish or part of a festive meal.

Notes

  • This salad can be made a day ahead to let the flavors develop further.
  • For a more traditional version, you can replace the Greek yogurt with more mayonnaise.
  • Feel free to add diced boiled eggs for extra texture and flavor.
