- 2 large russet potatoes, peeled and diced into small cubes
- 1 large carrot, peeled and diced into small cubes
- 1 cup canned green peas
- 1/2 cup dill pickles, diced
- 1/3 cup mayonnaise
- 1/3 cup Greek yogurt
- 1 teaspoon kosher salt
- 1/4 teaspoon black pepper
Instructions
- Place the diced potatoes and carrots in a pot of water and bring to a boil. Cook for about 10-12 minutes, or until tender but still firm. Drain and set aside to cool.
- In a large mixing bowl, combine the cooked potatoes, carrots, green peas, and dill pickles.
- In a separate small bowl, mix the mayonnaise, Greek yogurt, kosher salt, and black pepper until smooth.
- Pour the dressing over the vegetable mixture and stir gently to combine.
- Chill the salad in the refrigerator for at least 1 hour before serving to allow the flavors to meld together.
- Serve cold as a side dish or part of a festive meal.
Notes
- This salad can be made a day ahead to let the flavors develop further.
- For a more traditional version, you can replace the Greek yogurt with more mayonnaise.
