Description

These Rotisserie Chicken Hawaiian Sliders feature tender rotisserie chicken, melted pepper jack cheese, spicy mayo, and creamy avocado, all sandwiched between soft Hawaiian rolls. A perfect blend of flavors and textures, these sliders are a hit for lunch, snacks, or as an appetizer!


Ingredients

  • 12 Hawaiian rolls
  • 2 cups rotisserie chicken, shredded
  • 12 slices pepper jack cheese
  • 1 cup lettuce, shredded
  • 1/2 cup pickles, sliced
  • 1/2 cup spicy mayo
  • 1/4 cup mashed avocado or guacamole, or sliced avocado
  • 1 tbsp butter, softened
  • Butter Sauce:
  • 1 tbsp butter, melted
  • 1/2 tbsp Dijon mustard
  • 1/2 tsp poppyseeds

Instructions

  1. Preheat your oven to 350ยฐF (175ยฐC).
  2. Prepare the rotisserie chicken by removing the chicken from the bone and peeling off the skin.
  3. Cut all of the Hawaiian rolls in half and layer the bottoms of the rolls in a casserole dish side by side.
  4. Spread spicy mayo across the bottom of the buns (add more to the top if desired!).
  5. Layer HALF of the cheese on top, tearing pieces as needed to fit the buns.
  6. Spread mashed avocado on top of the cheese in an even layer. You can also use sliced avocado or guacamole here.
  7. Add the shredded rotisserie chicken to each bun, ensuring even coverage.
  8. Top with pickles and the remaining cheese slices. Add any additional spicy mayo or sauce if desired.
  9. Place the top of the rolls on. In a small bowl, melt the butter and add mustard and poppyseeds. Stir well.
  10. Brush the butter mixture onto the top of the rolls.
  11. Cover the baking dish with tinfoil and bake for 20โ€“25 minutes until the cheese is melted. Remove the foil and bake for an additional 3โ€“5 minutes to get a golden top on the sliders.
  12. Serve hot, or chill for later. Optionally, add fresh lettuce after baking for extra crunch. Serve with extra dressing. Enjoy!

  • For a quicker prep, use store-bought shredded rotisserie chicken.
  • If you prefer a crunchier slider, add fresh lettuce after baking.
  • Feel free to add extra spicy mayo or sauce to taste.
