Description

Romesco Sauce is a bold and flavorful Spanish sauce made with fire-roasted tomatoes, red peppers, almonds, and garlic. Perfect as a dip, pasta sauce, or drizzled over grilled meats and seafood!


Ingredients

  • 14 oz canned fire-roasted tomatoes, drained
  • 12 oz roasted red peppers, drained
  • 3/4 cup almonds
  • 1/4 cup extra virgin olive oil
  • 1/4 cup fresh parsley
  • 1 tsp paprika
  • 1 tsp crushed red pepper
  • 2 cloves garlic
  • 1 Tbsp red wine vinegar
  • Juice of 1/2 lemon
  • Salt, to taste

Instructions

  • Blend Ingredients:
    • Place all ingredients in a blender or food processor.
    • Blend until smooth and creamy.
  • Adjust Seasoning:
    • Taste and adjust salt as needed.
  • Serve:
    • Use as a dipping sauce, drizzle over grilled meats and seafood, or toss with pasta.

Notes

  • Almonds Substitute: You can use hazelnuts instead for a traditional twist.
  • For a Smokier Flavor: Add a pinch of smoked paprika.
