Roasted Makhana (fox nuts) are healthy, crispy, and flavorful. Perfect for a quick and easy snack, they can be made in either an oven or air fryer, and are seasoned with a variety of spices for a delicious treat.

- 2 cups phool makhana (fox nuts)
- 4 teaspoons oil, divided
- 1/4 to 1/2 teaspoon salt, adjust to taste
- 1/4 to 1/2 teaspoon cayenne pepper powder (red chili powder)
- 1/8 teaspoon turmeric powder
- 1/2 teaspoon chaat masala (optional)
Instructions
- Oven Instructions: Preheat the oven to 300ยฐF (148ยฐC). In a large bowl, combine the fox nuts, 3 teaspoons of oil, salt, cayenne pepper, and turmeric powder. Mix well until evenly coated. Transfer to a baking sheet and bake for 13-14 minutes, or until crisp. Taste one to check if itโs crunchy; if not, bake for an additional 2 minutes. Once done, toss the hot nuts with the remaining 1 teaspoon of oil and chaat masala (if using). Let cool before serving.
- Air Fryer Instructions: Preheat the air fryer to 300ยฐF (148ยฐC). In a large bowl, combine the fox nuts, 3 teaspoons of oil, salt, cayenne pepper, and turmeric powder. Mix well until evenly coated. Transfer the nuts to the air fryer basket and cook for about 4 minutes, or until crisp. Taste to check for crunchiness; if not done, air fry for an additional minute. Toss the hot nuts with the remaining 1 teaspoon of oil and chaat masala (if using). Let cool before serving.
Notes
- If the makhana are not crispy, add additional time in the oven or air fryer in 1-2 minute intervals until desired crunchiness is achieved.
