- 1 pound Brussels sprouts, trimmed
- Extra-virgin olive oil, for drizzling
- Sea salt and freshly ground black pepper
- Lemon Parmesan seasoning (optional)
- 1 tablespoon fresh lemon juice
- 2 teaspoons lemon zest
- 1 tablespoon grated Parmesan cheese or 1/4 cup shaved
- 1 tablespoon fresh thyme leaves
- Fresh parsley leaves, for garnish
- Pinch red pepper flakes
Instructions
- Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Halve the Brussels sprouts and place them on the baking sheet.
- Drizzle with olive oil, then season with sea salt, black pepper, and optional lemon Parmesan seasoning.
- Toss to coat evenly, then spread the sprouts cut-side down for best browning.
- Roast for 20–25 minutes, or until the edges are crispy and golden brown.
- Transfer to a bowl and toss with lemon juice, lemon zest, Parmesan, thyme, and red pepper flakes.
- Garnish with fresh parsley and serve warm.

- For extra crispiness, avoid overcrowding the pan.
- Shaved Parmesan adds richer texture for serving.
- Add a drizzle of balsamic glaze for a sweeter finish.
