Ingredients

  • 1 cup ricotta cheese (full-fat, drained)
  • 1/3 cup shelled pistachios, finely chopped
  • 3 tablespoons honey (plus extra for drizzling)
  • 1 large egg
  • 1/4 cup all-purpose flour
  • 1 teaspoon lemon zest
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Chopped pistachios, for garnish

Instructions

  1. In a mixing bowl, combine ricotta, egg, honey, lemon zest, vanilla extract, and salt. Mix until smooth and creamy.
  2. Add flour and half of the chopped pistachios, stirring gently to form a soft dough-like mixture.
  3. Using a small scoop or spoon, form tablespoon-sized balls of the mixture and roll gently in your hands.
  4. Heat a nonstick skillet over medium heat with a touch of oil or butter.
  5. Cook the ricotta bites for 2–3 minutes per side until golden brown, turning gently with tongs or a spatula.
  6. Transfer to a plate and drizzle with warm honey. Sprinkle the remaining chopped pistachios on top.
  7. Serve warm or at room temperature and enjoy the creamy, nutty sweetness.

  • Drain excess liquid from ricotta before using for best texture.
