- 1 cup ricotta cheese (full-fat, drained)
- 1/3 cup shelled pistachios, finely chopped
- 3 tablespoons honey (plus extra for drizzling)
- 1 large egg
- 1/4 cup all-purpose flour
- 1 teaspoon lemon zest
- 1 teaspoon vanilla extract
- Pinch of salt
- Chopped pistachios, for garnish
Instructions
- In a mixing bowl, combine ricotta, egg, honey, lemon zest, vanilla extract, and salt. Mix until smooth and creamy.
- Add flour and half of the chopped pistachios, stirring gently to form a soft dough-like mixture.
- Using a small scoop or spoon, form tablespoon-sized balls of the mixture and roll gently in your hands.
- Heat a nonstick skillet over medium heat with a touch of oil or butter.
- Cook the ricotta bites for 2–3 minutes per side until golden brown, turning gently with tongs or a spatula.
- Transfer to a plate and drizzle with warm honey. Sprinkle the remaining chopped pistachios on top.
- Serve warm or at room temperature and enjoy the creamy, nutty sweetness.
