- 1 pound fresh raspberries, divided
- 1/4 cup raspberry liqueur (such as Chambord)
- 1 package (7 ounces) ladyfingers
- 2 cups mascarpone cheese
- 1 cup heavy cream
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 2 tablespoons fresh lemon juice
- Dark chocolate shavings, for garnish
- Fresh mint, for garnish
Instructions
- In a small bowl, mash half of the raspberries with a fork and stir in the raspberry liqueur. Let it sit for 10 minutes to allow the flavors to meld.
- In a separate bowl, beat the mascarpone cheese, heavy cream, powdered sugar, vanilla extract, and lemon juice until soft peaks form.
- In a shallow dish, quickly dip each ladyfinger into the raspberry mixture, making sure theyโre not too soggy.
- Arrange the dipped ladyfingers in the bottom of a 9ร9-inch baking dish or similar-sized pan.
- Spread half of the mascarpone cream mixture over the ladyfingers, smoothing the top with a spatula.
- Sprinkle half of the fresh raspberries on top of the cream.
- Repeat the layers with the remaining ladyfingers, mascarpone cream, and raspberries.
- Cover the dish and refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to meld and the dessert to set.
- Before serving, garnish with dark chocolate shavings and fresh mint leaves.
Notes
- For extra flavor, add a splash of lemon zest to the mascarpone cream.
- If you prefer a non-alcoholic version, simply soak the ladyfingers in a raspberry juice or syrup instead of raspberry liqueur.
