Description

Raspberry Tiramisu is a refreshing twist on the classic Italian dessert, featuring layers of delicate ladyfingers soaked in raspberry liqueur, whipped mascarpone cream, and fresh raspberries. The combination of rich, creamy mascarpone and tart raspberries creates a perfect balance of sweetness and tang.


Ingredients

  • 1 pound fresh raspberries, divided
  • 1/4 cup raspberry liqueur (such as Chambord)
  • 1 package (7 ounces) ladyfingers
  • 2 cups mascarpone cheese
  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons fresh lemon juice
  • Dark chocolate shavings, for garnish
  • Fresh mint, for garnish

Instructions

  1. In a small bowl, mash half of the raspberries with a fork and stir in the raspberry liqueur. Let it sit for 10 minutes to allow the flavors to meld.
  2. In a separate bowl, beat the mascarpone cheese, heavy cream, powdered sugar, vanilla extract, and lemon juice until soft peaks form.
  3. In a shallow dish, quickly dip each ladyfinger into the raspberry mixture, making sure theyโ€™re not too soggy.
  4. Arrange the dipped ladyfingers in the bottom of a 9ร—9-inch baking dish or similar-sized pan.
  5. Spread half of the mascarpone cream mixture over the ladyfingers, smoothing the top with a spatula.
  6. Sprinkle half of the fresh raspberries on top of the cream.
  7. Repeat the layers with the remaining ladyfingers, mascarpone cream, and raspberries.
  8. Cover the dish and refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to meld and the dessert to set.
  9. Before serving, garnish with dark chocolate shavings and fresh mint leaves.

Notes

  • For extra flavor, add a splash of lemon zest to the mascarpone cream.
  • If you prefer a non-alcoholic version, simply soak the ladyfingers in a raspberry juice or syrup instead of raspberry liqueur.
