  • 1/3 cup honey or maple syrup
  • 3 tablespoons coconut oil (melted)
  • 1 teaspoon vanilla extract

Instructions

  1. Prepare the dry ingredients: Start by combining rolled oats, baking powder, chia or flaxseeds, and a pinch of salt in a large bowl. Mix everything well to evenly distribute the baking powder and seeds.
  2. Mix the wet ingredients: In a separate bowl, whisk together the almond butter, honey or maple syrup, melted coconut oil, and vanilla extract until smooth and creamy.
  3. Combine wet and dry ingredients: Pour the wet mixture into the dry oats mixture and stir until fully incorporated. The dough should be sticky and hold together well.
  4. Assemble the bars: Line a baking pan with parchment paper. Spread half of the oat mixture evenly on the bottom. Carefully spoon raspberry jam over this layer, then top with the remaining oat mixture, gently pressing it down to seal the jam layer inside.
  5. Bake and cool: Bake in a preheated oven at 350ยฐF (175ยฐC) for approximately 20-25 minutes, or until the edges turn golden brown. Let cool completely in the pan before slicing into bars.
