Description

A refreshing and vibrant raspberry gelatin dessert with a smooth, glossy texture and bright berry flavor, perfect for gatherings or an easy make-ahead treat.


Ingredients

  • 2 packages (3 ounces each) raspberry flavored gelatin powder
  • 2 cups boiling water
  • 2 cups cold water
  • 2 tablespoons granulated sugar (optional)
  • 1 cup fresh raspberries (for garnish or folding in)

Instructions

  1. Lightly grease a gelatin mold with a small amount of neutral oil and set aside.
  2. In a large mixing bowl, pour boiling water over the raspberry gelatin powder.
  3. Stir continuously until the gelatin is completely dissolved.
  4. Add granulated sugar if using and stir until dissolved.
  5. Stir in the cold water until fully combined.
  6. If adding fresh raspberries inside, gently fold them into the mixture.
  7. Pour the mixture carefully into the prepared mold.
  8. Refrigerate for at least 4 hours, or until fully set and firm.
  9. To unmold, dip the bottom of the mold briefly in warm water, then invert onto a serving plate.
  10. Garnish with fresh raspberries and serve chilled.

Notes

  • Ensure the gelatin is fully dissolved to avoid grainy texture.
  • Chill overnight for the cleanest slices.
  • Do not freeze, as freezing can change the texture.
  • Store covered in the refrigerator for up to 4 days.
